Jambu, tapioca, Brazil nut, tucupi. Ingredients that stand out among the riches of Paraense cuisine and also contribute to generating income and job opportunities. This is the mission of “Gastronomia do Amanhã” (Tomorrow's Gastronomy), which conducts cooking and market workshops for local communities. Sponsored by Albras, the new edition of the project will take place in the municipalities of Barcarena and Abaetetuba. Registrations for the first workshop began on October 25th and will follow the schedule according to each locality.

Each class will consist of five days of theoretical and practical lessons, covering topics such as entrepreneurship, development of technical sheets for food, event planning, and small businesses. The workshops primarily emphasize the flavors and aromas of Paraense ingredients, respecting and valuing the regional culture. On the fifth and final day, the result of all this knowledge exchange will be shared with the public in a delightful gastronomic showcase, along with the presentation of certificates.

"We are motivated to continue a project that supports and enables the dissemination of professional cooking techniques and economic fundamentals to supplement the income of families and also values the gastronomic culture of Pará, promoting autonomy and financial independence for local residents," says João Batista Menezes, director of Albras.

Chef Verena Aquino, the project's technical coordinator, shares her experience of helping people in this learning process to see gastronomy as a source of income.

"We organize everything so that the students feel safe and motivated to continue cooking after completing the course. The language and classes are adapted to what participants encounter in their daily lives. At the end of the courses, we always have good results: students who have opened their own restaurants, are pursuing a degree in gastronomy, and now have their own income," concludes Verena.

Registrations

There will be 30 slots available for each class. Registrations can be made through a registration form, which will be available in high-traffic areas within the communities and on the official project's Instagram profile, @gastronomiadoamanha.

In the municipality of Barcarena, the workshops will take place in the following locations: Vila do Conde and Vila Nova, from October 30th to November 3rd; Jardim das Palmeiras and São Francisco, from November 6th to 10th; Luz Divina and São José, from November 13th to 17th; Novo Horizonte and Pioneiro, from November 20th to 24th; Novo Paraíso and Laranjal, from November 27th to December 1st. In Abaetetuba, the Beja community will receive the training from December 11th to 15th.
